Cheese is the new turkey at Salumiere


Turkey may be traditional on Thanksgiving. But cheese is becoming the post-holiday ritual at downtown Walla Walla gourmet grocery Salumiere Cesario.

For the fourth consecutive year the Second Avenue shop will host a Parmigiano Reggiano Wheel Cutting the Saturday after Thanksgiving.

Business owners Damon and Colby Burke loved the wheel that was brought in last year, so they secured the same type of cheese again: a 36-month aged wheel from Caseificio Sociale Val Parmossa, located near the small town of Tizzano Val Parma, Italy.

The cheese from that area is known as "mountain" parmigiano because the milk source comes from 15 different dairies, all located within 30 kilometers of the cheese-making facility, according to an announcement on the event.

The higher elevation mountain dairies are regarded there as superior because the hillsides provide a natural environment for grasses and herbs. The quality of vegetation for grazing is believed to contribute to the quality of the milk that comes from the cows for the cheese, which is released on a very limited basis to the world.

The wheel will be broken down in the store, 20 N. Second Ave., starting at noon. During the first hour, the cheese will be offered at $18 per pound. Every hour after that, the cost will increase by $1 per pound until it reaches $25 per pound or until the wheel is gone. A local photographer has released a calendar that offers a different view of the Walla Walla Valley to go with the changing months of the new year.

Brent Bergherm's "Picture Walla Walla Calendar for 2011" is based on a series of photographs he refers to as "the other side of the valley." The images are a "behind-the-scenes" look of the community that aim to capture not the traditional pretty shots of historic landmarks or the landscape, but the "real" Walla Walla.

Photo from Bergherm's series include a couch abandoned on the side of the road against a backdrop of wheat and an old barn; faded business signs painted on the sides of old buildings, and other discoveries from travels through the Valley.

Bergherm, who teaches graphic design and photography at Walla Walla University, recently completed the degree requirements for a master of arts in digital photography from the Savannah College of Art and Design.

His calendar is currently available at Book & Game Co., on the corner of First Avenue and Main Street in downtown Walla Walla. Bergherm hopes it will be available in other local stores in time for next week's Black Friday shopping.


Plan to shine in Milton-Freewater's 2010 Christmas Magic Light Parade? The sun is setting on your chance to participate.

Entry forms for those who want to participate in this year's parade are due Dec. 1.

The parade begins at 6:30 p.m. Dec. 3. Parade participants set up in the parking lot at the former Dollar Store building -- now the future home of Henry's ACE Hardware. The parade route moves past the high school through downtown Freewater and ends at Valley Christian Church/Freewater Park.

Music on floats is encouraged, but a couple of other ground rules: All parade entrants who are minors must be supervised by an adult.

No candy or other objects can be thrown from moving vehicles, though candy may be distributed by walkers or those on horseback.

Parade applicants with animals must provide cleanup. No canned air horns or honking of vehicle horns will be allowed.
