— The countdown is on to the opening of a new downtown deli.

Red Reina Cuisine is slated for an opening a week from Saturday, according to a post this week from the Downtown Walla Walla Foundation.

The new business has been in the works for a couple of months at 202 E. Main St., the former home of Computer Resources.

According to the Red Reina Facebook page, the eatery will feature local produce from the Walla Walla Valley and a focus on creative, wholesome, clean food.

What does that mean? For starters, Red Reina promises “the most exciting and surprising prepared foods from small producers throughout the Northwest that share our passion for great food.” But according to a description on the business, it will use no coloring or preservatives and is committed to organic, fair trade, sustainable and environmentally responsible products wherever possible. “This includes our food products as well as all of the packaging, paper products and cleaning supplies that we use to keep our store and kitchen healthy, homey and welcoming.” Walla Walla wines and Northwest beer and cider are also on the menu.

Posted hours of operation are 11 a.m.-7 p.m. Tuesday through Saturday. For more details, follow the progress on Facebook.
