Vacation to the Caribbean wasn’t all play for owners of A Wing & A Prayer Barbecue + Catering.
Timm and Teri Johnson re-opened their downtown barbecue business Monday after a couple of weeks off, and will offer new recipes inspired by time spent in the kitchens at some of the island eateries.
Timm Johnson said he shared cooking tips in the kitchen at Woody’s Seafood Saloon on the island of St. John. From the owner of Jamaica Me Crazy Bar and Restaurant, he also received a comprehensive lesson on Jamaica Jerk techniques. Consequently, A Wing & A Prayer will soon offer Jamaica Me Crazy Pork Loin on Saturday nights, a followup to Friday’s smoked prime rib offering.
The down time at the business also opened the door for a few other changes. Johnny “Mural Man” Johnson has painted the inside of the dining room at 201 E. Main St. The purchase of a deep fryer is expected to help with menu expansion, including the addition of french fries and pulled pork fritters. The business is also touting new Wi-Fi service. It also has new hours: 11 a.m.-8 p.m. Monday through Thursday, and 11 a.m.-9 p.m. Friday and Saturday.
